Taco Cups (Fun Party Favorite)

This was actually an idea that just popped in my head. I wanted nachos but didn't want the chips that come along with it. Ive decided to do something a tad bit different.
Queso Blanco Taco cups with Beans and rice :)
Ingredients:
- Queso Blanco cheese (but you can use velveeta if desired)
- Rotel (HOT)
- Ground beef
- Flour tortillas

Preheat oven to 350 degrees.
Directions:
1. You will make the cheese sauce as you would do with normal nachos (there are a ton of recipes and videos on how to make the cheese sauce, only difference is you'll be using queso blanco)
2. The tortillas you will fold into the muffin pan as shown below, each tortila isn't rolled the same, just have it rolled to where nothing can escape from the bottom, but dont forget before inserting spray the container with nonstick spray/butter/oil either will do.
3. Once the tortilla is rolled you will then put your cheese and meat mixture inside the taco cup
4. The mixture will bake in the oven for about 5-10 minutes (may not even be that long depending on how hot your oven gets and the brand of tortilla) only have it in the oven til the tortilla is hard like a chip
5. Remove from oven and then serve.


My boyfriends grandma made beans and rice to serve along side of the taco cups. & I must say it was DELICIOUS!!!! The perfect pairing of the two. #SheIsAmazing
