Creole Spring Rolls

Inspired by Phil and Dereks Voodoo Spring Rolls


Ingredients:

- Spring roll wrappers (find at local grocery store)

- Green onion (1) chopped

- Half of (1) red and green bell pepper chopped

- (1) chopped andouille sausage

- half a pack crawfish tails (seasoned with crawfish boil seasoning)

- (1) boudin rice sausage

- mild cheddar sprinkled cheese

- Seasonings of your choice


Instructions:

  1. In a pan have vegetable oil hot and ready

  2. In a pan cook your boudin sausage rice with the green onion lightly browning it, season lightly, place mixture to the side in a bowl

  3. Cook chopped sausage, lightly season, browning the sausage, move meat to the bowl with the boudin rice

  4. Cook crawfish tail with crawfish boil seasoning, (this will make it spicy) bring to a rolling boil and drain in strainer, place in bowl

  5. Add the bell peppers to the bowl with the other meats and stir until well distributed and combine

  6. Get spring rolls, wet the corners with water (helps them stick)

  7. Add sprinkle of cheese and the mixture and top with more cheese, BE CAREFUL NOT TO OVER STUFF SPRING ROLL WRAPPER, WATCH YOUTUBE VIDEO ON HOW TO PROPERLY FOLD THE SPRING ROLL)

  8. Fold the spring roll

  9. Cook in hot oil for about 10 seconds on each side til desired brown and crunchiness

  10. Ready to serve
