My famous Cajun Boudin Rice

Prep Time: 20 minutes

Cook Time 35 - 45 minutes



Ingredients:

- 2 packs boudin rice sausage

- Green onion, chopped (1)

- Half of (1) red and (1) green bell pepper (chopped)

- Seasonings of your choice (I have a post on my favorite seasonings)

- Shrimp (peeled, not frozen, raw)

- Chicken stock (low sodium preferably)


(I sometimes add cooked/chopped andouille sausage and cooked crawfish tails in as well depending on how I feel)


Instructions:

  1. Preheat oven to 350F

  2. Combine boudin sausage, chopped green onion, red/green bell pepper and shrimp in mixing bowl (this would be the step you would add the andouille sausage and crawfish tails if you wanted)

  3. Add seasonings of your liking, and add the mixture to a pre-greased baking dish to your choice

  4. Pour in enough chicken stock to cover the rice half way, (about half of the dish, dont want to dry out, periodically check on your rice that it is not drying it, and if so continue to add more)

  5. Sprinkle the top of the dish with paprika

  6. Bake for 35-45 minutes

  7. Turn oven to broil on LOW to brown the top for 1-2 minutes
